A Healthy and Easy Quinoa Recipe for Breakfast

We are sure you have tried quinoa as a healthy side or in a hearty salad, but have you ever considered trying quinoa for breakfast. Now we are not trying to step on Oatmeal’s toes but we want you to incorporate into your day. Quinoa is incredibly nutritious, loaded with iron and antioxidants, high in protein and fiber. Who wouldn’t want to start their day with some quinoa? These colder winter mornings are an excellent time to take a break from oatmeal routine and try Quinoa Breakfast Porridge.

 

We found this yummy and healthy recipe from Chef Jane Coxwell:

 

Warm Quinoa Breakfast Porridge 

Serves 4

Almonds, quinoa and antioxidants make this is just about the healthiest way to start the day. This can actually be served warm in the winter months, or cold in summer months, or vice versa—whatever makes you happy!

Ingredients

  • 1 cup of quinoa
  • 1/2 cup almond milk/dairy milk
  • 1/2 tsp vanilla extract
  • 1 tsp honey
  • 1 cup strawberries, quartered
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 handful of pomegranate seeds
  • 2 tbsp almond butter/peanut butter
  • 1/2 cup sliced almonds, toasted
  • A few mint leaves
  • 1/2 lime/lemon

Directions

  1. Bring a pot of water to the boil, and add the quinoa. Cook it until it’s just underdone, just a few minutes less than it says on the packet. Drain it and put it back in the pot over a low heat. Then add the almond milk, almond/peanut butter and vanilla, and keep stirring for a couple of minutes.
  2. Remove from the heat and add the berries, seeds and nuts. Give it a taste. If you’d like to add more honey, almond milk, etc. it’s up to your preference. To serve, give a little squeeze of lime/lemon to sharpen it up, and place in a bowl topped with a few mint leaves. Beautiful.

Easy Ways to Incorporate Kale into your Diet

Our Favorite Superfood: Kale

Kale has an abundant amount of health benefits, and it is ranked as one of the best all-around superfoods!  It is a nutritional powerhouse that tastes delicious, can lower cholesterol, and even provide some protection against cancer.  According to WebMd, “One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.”  It’s no wonder it’s on the top of our list, and we want to share some of our favorite ways to incorporate kale into your daily diet.

1) Add Kale to your smoothie:

Try:

1 ½ Cup of Kale

1 Cup Strawberries

½ Banana

1 Cup Ice

½ Cup Soy, Almond, or Coconut Milk

Blend this all up and enjoy!  You won’t even taste the kale in your smoothie.

 

2) If you have a juicer (or even a blender and a strainer), add kale to your juice:

Try:

2 Cup Kale

½ Large Cucumber

1 Apple

Squeeze of Lemon Juice

1 Tbsp Honey (optional)

1 Cup Water (if necessary)

Both options are full of nutrition and taste absolutely delicious!

 

3) Add Kale to your soup:

Try adding kale to almost any soup you make, it will still taste just as good, if not better.

One of our favorite Kale Bean soups includes:

5 Cups Kale

1 Potato

1 Carrot

1 Can White Beans or Garbanzo Beans

2 Chopped Zucchini

½ Chopped Onion

1 Cup Chicken or Ground Turkey (Optional)

Kale Soup

Keep in mind, if you’re making anything like a broccoli cheddar or chicken noodle soup, you can always add a cup of kale!

 

4) Add kale to your salad:

You’re already eating a handful of greens, why not either substitute your lettuce or greens with kale or just add kale to your salad.  Try this amazing kale recipe:

2 Cups Kale

¼ Cup Dried Fruits

¼ Cup Almonds

½ Cup Edamame

½ Avocado

1 Chicken Breast (Optional)

5 Ways to Kickstart a Healthy Lifestyle

1) Drink lots of water

Tip: Add frozen fruits such as blueberries, strawberries, oranges, lemons, cucumbers (try adding mint too for added flavor).  Also try adding CHIA SEEDS!!

2) Incorporate one active routine into your schedule

For example, try taking the stairs at work, squat when you’re bored at home, or even ride your bike to work (plus, you’re doing good for the environment).

Make it a habit to work out for 30 mins a day (this can be walking the dog, riding skates around your block, or going for a quick jog). As long as you make it routine, you’re already off to a great start!

3) Begin your day with a healthy breakfast!

You know that saying that “breakfast is the most important meal of the day?”  Well we can’t stress this anymore!  According to WebMD, “Some people skip breakfast in an effort to lose weight, but that’s not a good idea — it can backfire.

Skipping meals, especially breakfast, can actually make weight control more difficult. Breakfast skippers tend to eat more food than usual at the next meal, or nibble on high-calorie snacks to stave off hunger.

Several studies suggest that people tend to add more body fat when they eat fewer, larger meals than when they eat the same number of calories in smaller, more frequent meals.”

So, you’ve heard it over and over and you’re hearing it again (from the professionals as well), “breakfast is the most important meal of the day!”

4) Prioritize with This or That

It’s often difficult to make a good meal choice when given a handful of both healthy and unhealthy food options throughout the day. But, if you can encourage and basically force yourself to reach for the ‘healthier’ option (when it’s tough), you will begin to make healthy decisions subconsciously in no time!  When debating between foods, aim for dark green veggies and avoid super caloric foods such as breads and sweets!

5) Keep Healthy Snacks on Hand

It’s easy to get bored and fall off the healthy wagon.  But if you can prepare for times like these, you can probably avoid complete discouragement of a healthy lifestyle.  Buy a handful of healthy snacks to keep around your home, at work, and even at school.  Some good suggestions are: almonds with dried cranberries, certain fruits, small meal bars, fresh juices, and dried veggies.  The options are actually endless, but it is essential to prepare for times of snacking.
